• 2 Ovyta eggs
  • 6 egg yolks
  • 750 ml milk
  • 1 vanilla pod, cut halfway through lengthways
  • 200g sugar
  • 10 tbsp. sugar
  • 5 tbsp. water


Pre-heat the oven to 175°C. For the caramel gently heat the sugar with the water. As soon as the sugar starts to change colour, pour the caramel into the moulds. Turn the moulds so that that the sides are covered with caramel. Warm the vanilla pod in the milk for 15 minutes over a low heat. Leave to cool down a bit. Beat the eggs, the egg yolks and sugar together. Add a little milk to the mixture. Continue stirring thoroughly. Pour the mixture into the 4 moulds. Put the moulds into an oven dish filled with boiling water. Put the dish into the oven. After 50 minutes, check if the flan is cooked by inserting a wooden skewer. When the skewer emerges from the flan clean, the flan is cooked. To serve, turn the flans out upside-down onto little plates.
