Crepe tart with vegetables


  • 4 Ovyta eggs
  • 1/4 tsp. powdered ginger
  • 1/4 tsp. turmeric
  • 4 tbsp. olive oil
  • 250 g mixed mushrooms
  • 5 spring onions in rings
  • 1 red bell pepper cut into thin strips
  • 1 red chilli pepper cut into rings
  • salt and pepper


Beat the eggs together with the powdered ginger and turmeric and season with salt and pepper. Heat 1 tbsp. oil and stir-fry the mushrooms, spring onion, pepper and chilli pepper for 5 minutes. Fry little crepes with the egg mixture in the remaining oil. Make a tart by covering a crepe with some of the vegetable mixture and adding another crepe on top, then more vegetables, repeating until all the ingredients have been used up.
