Egg and courgette salad


  • 4 hard-boiled Ovyta eggs
  • 1 courgette cut into thin strips
  • 1 stalk of celery cut into little semi-circles
  • 1 red bell pepper cut into strips
  • Small handful finely chopped chives
  • 1 punnet of cress
  • 1 red onion in thin rings

For the dressing:

  • 2 tbsp. white wine vinegar
  • 1 tsp. mustard
  • 100 ml olive oil
  • salt and pepper


Separate the whites from the yolks. Chop the whites finely and then chop the yolks finely. Mix the courgette, celery, pepper, chives and cress together. Make a dressing with vinegar, mustard and oil and season with salt and pepper. Mix into the salad. Distribute the egg whites through the salad. Garnish with red onion and the chopped egg yolks.
